Oils and fats are composed of glycerin and fatty acids, and the technology where one type of fatty acid that is bound to glycerin can be replaced with another type is called trans-esterification.
Fuji Oil was the first company in the world to commercialize Inter- & Trans-esterification Technology using the enzyme lipase.
Inter- and trans-esterification has enabled us to produce oil and fat alternatives to cocoa butter, which was once an expensive raw material for chocolate. This technology is now essential for oil and fat processing.
