A Study of Fat Bloom and Anti-Bloom Agents

Two years' study at Leatherhead Food RA (UK) confirmed that anti bloom fats have significant effect in preventing fat bloom on chocolate. Vamo-Fuji, European subsidiary of Fuji Oil, participated with two other major speciality fat manufacturers in this study.

Fat bloom is one of the major problems to the manufacturers of chocolate. During storage the surface of the chocolate can turn to gray or white, making the chocolate less attractive.

Vamo-Fuji participated in this Leatherhead Food RA study with two anti-bloom fats. "Ertina ABF", used in a 3 % addition, improved the shelf life of chocolate significantly; chocolate based on "Chocoseed B" was the only one to resist well at 37 0C, an extremely high temperature for chocolate.
