Handbook of hydrocolloids, which is edited by Professors G. O. Phillips and P. A. Williams, recently published from Woodhead Publishing Ltd., England, includes a chapter on Soluble soybean polysaccharide.
Soluble soybean polysaccharide is a water soluble polysaccharide extracted and refined from soybean. FUJI OIL CO., LTD. has been marketing the product under the brand name, "SOYAFIBE-S".
SOYAFIBE-S is mainly composed of the dietary fiber of soybean and has relatively low viscosity and high stability in aqueous solution.
Besides as a dietary raw material for fiber fortified foods, SOYAFIBE-S has unique functional properties such as dispersion, stabilization, emulsification and adhesion. These properties can be applied not only to food & beverage but also non-food industrial products.
